New year new you?
Well maybe not but after the gluttony and rich food from over the festive period I welcomed the return of my favourite homemade soup - leek and sweet potato. Its SO easy to make, full of vitamins and minerals needed to fight off all the bugs hanging around and perfect for cold winter days!

It takes 10 mins to prepare and 45 mins to cook - simple
Serves 4
Drop of oil
2 large sweet potatos
1 onion
4 leeks
vegetable stock
salt and pepper to taste
a dash of chilli powder
First peel and chop your sweet potatoes, onion and leeks, add drop of oil to saucepan and fry for 5 minutes
Then add the stock to boiling water and add to the pan (enough to cover the vegetables)
Add you chilli powder or any other seasoning you prefer
Bring the pan to boil and continue to boil for 5 minutes
Reduce to simmer and set a timer for 45 minutes
Remove from the heat and use a hand-blender to blend your soup
Serve up and enjoy!
